Some Earl Grey to chase away the chill.
These biscuits are an excellent choice for make-ahead, as the dough freezes well. Just slice and bake.
Earl Grey and Orange Butter Cookies
1 cup unsalted butter, softened
1/2 cup granulated sugar
1 orange’s freshly grated zest
1 ½ tsp orange juice
seeds from ½ vanilla bean
2 tbsp finely ground loose leaf Earl Grey tea
2 cups all-purpose flour
1/4 tsp salt
In the bowl of a stand mixer fitted with a paddle attachment, cream the butter and sugar at medium speed until light and fluffy. Mix in the zest, tea, salt, orange juice and vanilla seeds. Gradually blend the flour into the butter mixture at medium-low speed. Divide the dough in two. Shape into logs 1 1/2 inches in diameter using plastic wrap. Refrigerate 1-2 days to enhance the flavours. Preheat oven to 325F. Line a baking sheet with parchment. Slice the logs of dough about 1/4-inch thick. Bake for 20-25 minutes, or until edges of cookies turn golden brown.
