There’s something different in my new house. Something that clatters the blinds and sends chills down my spine. Air conditioning is synonymous with bliss in the heavy humidity of Toronto summer. With at least two more months of 30 degree temperatures ahead of us, I’m confident that my beauty sleep and ability to sit on our leather couch for any length of time are assured.
Goodness knows a repeat of last summer — a blistering hot season of drought in Ottawa — is not something that I want to go through again. We had a single tower fan to cool our stuffy attic apartment. Suffice to say it wasn’t wholly effective.
6 roasted red peppers, drained
2/3 cup fine fresh bread crumbs
1/3 cup walnuts, toasted lightly and chopped fine
2 to 4 garlic cloves, minced and mashed to a paste with 1/2 teaspoon salt
1 tablespoon fresh lemon juice, or to taste
2 teaspoons pomegranate molasses*
1 teaspoon toasted cumin seeds, ground
2 teaspoon dried hot red pepper flakes
3/4 cup extra-virgin olive oil
2 tsp allspice
Purée all ingredients until smooth. Serve with pita or red meats.
